We propose a gastronomic discourse that aims to be first and foremost a model of critical and sustainable consumption.
we therefore "reason" about the ingredients used by putting at the center of our cuisine those raw materials and production processes that have respect for people, nature and animals.
It goes without saying that our research starts from the territory that surrounds us - the so-called Km ZERO - going directly to select small local producers who daily cultivate, raise and transform with care and passion a good, clean and fair raw material.
Most of the supply chain is short, to say the least, proceeding from a range of small companies present mainly in the province of Bologna (fruit, vegetables, dairy products, meat) and - more generally - within the Emilia-Romagna region (fish, rice).
With great attention also to excellence from other Italian regions (oil, citrus fruits, dried fruits, tomatoes) as well as for those products absent in our country purchased through ethical fair trade circuits (sugar, chocolate).
