The history of Venice's Jewish community has also left its mark on the city's restaurants and, of course, bakeries. Unleavened bread and kosher cakes (without milk or butter) are delicacies frequently enjoyed by Venetians. The Volpe bakery, open since the 1950s, is said to be among the favorites of Venice's rabbi. Its dry cookies such as bisse, impade (almond paste) and zuccherini are exquisite. On the savoury side, a few slices of thick pizzas, fougasses with olives and other unleavened, gourmet breads.
