Are you a gut lover or a fan of culinary adventure? From 9:30 in the morning, in his small street kiosk, at the corner of Piazza Sant'Ambrogio and Via dei Macci in the Santa Croce district, Sergio prepares his tripe, finely sliced, then cooked in a delicious court-bouillon. The lampredotto, a true popular specialty, consists of a sandwich filled with quail, in other words, beef stomach, seasoned with herbs. A "poor dish" typical of the Florentine culinary tradition. Not to be missed!
