About 200 people, mostly women, work at the cashew processing plant. The producers themselves deliver their harvest, which is first checked for quality by eye. Then, the fruits are sorted according to their size and cooked in a steam oven. The shell is broken by a machine, then undone by hand. The nuts are then put back into the oven and de-skinned several times before being sorted according to their quality.
