If you turn right, at the crossroads of the monastery, and enter the runway (mountain bike advice) over two kilometers, you can observe the life of the deep shan campaign. In particular, on your left, you will find a jaggery factory, held by very welcoming farmers but not speaking a word of English.
The palm juice is successively transferred from one large tank to another, where it is brought to boil by a long furnace fed at one end. As a result, the juice thickens, and eventually coagulate in large sugar clots. You will eat it in this form in the most modest families, as welcome, and will find it in the market. To find it, follow the flies! In the summer, it is very popular in refreshing drinks, served all over Burma, even in the streets of Yangon. Jaggery is first melted into water, then the caramelized juice is left to cool. We drink it to the spoon, with big vermicelles of rice dough.
