Eager to make the local traditions known, about thirty restaurateurs from Sundgau have joined together in the Sundgau Association, routes of fried carp. They are committed to honouring regional gastronomy with carp. Each restaurant has its own recipe. Marinated, in fritters, fleischnakas, sushi, it has even been declined in dessert! Of course, all you can do is lift the lid and discover for yourself the surprises the chefs have in store for you!

The Carpailles will take place from March 24 to April 7, 2023 at all the members of the Routes of the Fried Carp. Reservation recommended.
Owner's Message
Keen to promote local traditions, restaurateurs in the Sundgau region of southern Alsace formed the Association des Routes de la Carpe Frite in 1975.
Today, around twenty of them belong to the association, and with their traditional know-how, they are committed to giving pride of place to carp, the real star of this fish country. Fried carp is THE typical Sundgau culinary specialty. It's served in fillets or steaks, with or without bones. Fried carp is also a remarkable site of taste, and if you haven't tried it yet, you won't have long to wait!
From Illfurth to Lucelle and from Montreux-Jeune to Rosenau, wherever you are in the Sundgau region, there's always a restaurant on the Routes de la Carpe Frite where you can enjoy this tasty fish.
