In this shop, the udon are hand-made and their flavour is all the more evident as the accompaniments are simple.
Udon are thick wheat noodles. Although reminiscent of ramen, they differ in their broth and ingredients, which are typically Japanese. This small restaurant, not far from Shinjuku station, is a good place to try a bowl ofudon. The noodles are handmade and accompanied by vegetable garnishes, meat fritters or, simply, a salted plum. The uncluttered presentation emphasizes the freshness of the ingredients. Everyone flocks to try it, and the queue stretches out in front of the little stall every lunchtime.
