TAISHŌKEN
In 1951, the tsukemen, noodles served separately from the broth, were born in this shop which has since become almost legendary.
In 1951, Masayasu Sakaguchi opened a ramen store in Nakano. The employees eat the remains of cold noodles soaked in a broth... This is the birth of tsukemen, a ramen dish where the noodles are separated from the soup. Today, this dish can be found in many restaurants. The shop, whose specialty is tsukemen, then moved to Ikebukuro and it is so popular that it gave birth to a fan club and many branches in Japan. It is now being exported to the United States.
