The jalantuùmene were, in the local dialect, the wise men of old (lawyers, teachers, doctors). Today, the jalantuùmene of the kitchen are the owners of this famous address, installed on a small picturesque square. The quality of the dishes is based on natural, peasant recipes, prepared with know-how. Try the pancotto (bread baked by the farmer with vegetables from the Gargano), orecchiette with courgettes, almonds and pecorino, or costolette di capretto, venison chops with thistles, potatoes and lemon.

Nous avons choisi ce restaurant sous conseil d’une amie.
Nous avons apprécié le cadre, au calme et intimiste, à côté d’une place avec église.
Nous avons opté pour la dégustation des menus (végétarien et de viande).
La qualité des ingrédients, l’équilibre des saveurs, les nombreux plats, était associée à un très joli dressage.
Le vin (un Susumaniello IGT du Salento) et l’huile d’olive locale étaient sublimes.
Le service et le professionnalisme du chef qui gère ce restaurant avec sa femme était impeccable.
Le rapport qualité prix est excellent (95 euro par personne tout inclu).
Mérite beaucoup ++
