A very celebrated holiday in Armenia, but not a holiday. Tradition has it that the egg, the paschal symbol, is dyed red, the colour of joy and beauty, but also the colour of the blood shed by Christ the Redeemer. The most practising people observe a 40-day fast (Bak or Karasounk) before Easter, which they break by consuming the eggs, red of course, before any other dish during the Easter meal of which lamb is the centrepiece, the tcheurek, a thick twisted brioche topped with almonds prepared especially for the occasion, serving as a dessert.
