Voted best chef in the U.S. by Times magazine, California chef Thomas Keller has opened this superb restaurant at the Venetian, with a Lyon-style bouchon theme. On the menu: mussels with saffron, gnocchi à la Parisienne, boudin blanc, trout amandine and croque-madame. To complete the change of scenery, the waiters wear the bistro outfit with bow tie. More affordable than the dinner menu, the brunch menu is a good alternative for tighter budgets wishing to taste French gastronomy revisited in the American style.
