Since its opening in 1903, this shop has been working to perpetuate the traditions of Japanese cuisine based on dashi (Konbu broth and bonito). Mr. Doi, the owner of the shop, is undoubtedly an expert in this area and you will find here all sorts of algae and dashi of course.
