The Etxaide mill is one of the oldest mills in the Baztan valley, which once had about thirty in operation. Built in the 19th century and renovated in 2003, it continues to reduce cereal grains into flour in an artisanal way. The flour is then used to prepare "talos", thin pancakes that are eaten during the festive season. However, you can taste them at any time of the year as part of the guided tour. A recommended visit behind the scenes of one of the valley's traditions.
