Idiazábal cheese with the registered designation of origin is produced in the Basque Country with milk from sheep of the Latxa breed. It is a full-fat cheese with an intense flavour, pressed and uncooked, and is matured for no less than 90 days. In this interpretation and tasting centre you will find all the information you need about the village's flagship product. Guided tours of the Ondramuño cheese dairy where the Aranburu family makes cheese are also organised.
