By obtaining his third star, the chef Eneko Atxa has made his restaurant Azurmendi a reference in the Basque Country. Very attached to his origins, this young Biscayan cultivates a permanent dialogue with the surrounding nature. His restaurant, located above the valley of Txoriemi, occupies an eco-building combining stone, wood and iron. All around, the vegetable garden supplies the chef with seasonal vegetables.
