A prestigious table led by Fernando Canales. After a career spanning almost 20 years inside the Palacio Euskalduna, the Basque chef regained his freedom in 2017 to develop his Etxanobe restaurant. This is now available in two concepts: Atelier, dedicated to haute gastronomy, and La Despensa, a more accessible Basque cuisine restaurant where you can enjoy refined dishes rooted in their terroir: the famous (and delicious) anchovy lasagne, braised hake kokotxas, truffled ajoblanco , green asparagus and gambas... Succulent!

Nous avons pris le menu Bilbao à 72€ avec une bouteille de vin (blanc et/ou rouge) comprise. Les plats sont plutôt jolis mais trop gras dans l'ensemble, ça gâche le plaisir. La cuisine basque est ainsi parait-il. Un peu déçus au final.
Le menu Bilbao est tout à fait excellent aussi bien gustativement que visuellement
