It's here that one of the young hopefuls of Asturian cuisine, Michelin-starred Ricardo González, officiates. He retains the classic elements of Asturian cuisine, such as croquettes, fabada and rice pudding, but builds on them with contemporary, non-conformist dishes. To achieve this, he draws up two menus, often modified to take account of the seasons, and works, for example, in winter with game products such as wild boar, deer, woodcock... and all year round with seasonal vegetables and fruit.
