The famous Champs-Elysées brasserie invites itself to the Caribbean. At the heart of the Carl Gustaf hotel, the rare wooden terrace of Fouquet's overlooks the entire port of Gustavia. Architects Gilles & Boissier have adapted the tradition of French elegance to the relaxed atmosphere of Saint-Barth. In the kitchen, three-starred chef Pierre Gagnaire has created an exceptional menu, revisiting the great classics of Parisian gastronomy, such as poached lobster medallion with butter and ginger, or semi-cooked tuna with foie gras and shiso.
