Chef Mauro Vittori has been at the helm of the Primitivo for 15 years, having honed his skills in a number of European restaurants. In this establishment with its traditional red-and-white-checkered tablecloths, he offers dishes prepared by hand, using only the finest ingredients. Antipasti, pasta, gnocchi, meat and fish (salmon or whitefish) are prepared with care and technique.
