Boucaniere means "smokehouse" in Cajun. The Johnson family has been making boudin and smoked meat for decades, using a technique they developed in Eunice, not far from Lafayette. You can also try the delicious smoked meat in a sandwich, along with boudin. It's far from light, but it's downright divine. The house also prepares breakfasts, gumbo, po-boys and various sandwiches, not to mention plates of barbecued meats with all the trimmings worthy of the name.
