Cochineal is Marfa's gourmet restaurant. The name refers to the Mexican red pigment extracted from the cochineal, which was once one of the most precious pigments. The restaurant also produces a red wine. The menu changes regularly, but always lives up to its reputation. The vegetables come from the in-house kitchen garden, and despite the finesse of the flavors and execution, the menu remains simple and unpretentious. Reservations can be made by email.
