The Suisan fish market is an institution in Hilo. Every morning, fishermen come to bring the fish they have caught at dawn. You can find local and fresh products whose prices depend on the arrival of the moment. If you don't have anything to cook at home, dishes are prepared on the spot with the fish of the day, notably the famous poke which is a real treat, with the choice of one, two or three fish per bowl.
