Chef Varin Keokitvon has been offering a new table since 2016, very fashionable in Seattle, combining influences from cuisines from around the world, particularly Laotian, reflecting its origins, and local ingredients, because it is still a "farm to table", a locavore restaurant. As he worked for a long time in Spain, the idea of gourmet tapas was an obvious one. It offers a wide range of dishes, including a "raw" menu, such as the divine fish "yellow tail", with passion fruit, avocado, cucumber, radish and pepper, drizzled with white rum, lime and grape juice and cucumber. Each dish is a sophisticated composition and a beautiful surprise. The bar is also very popular for its cocktails designed by a woman, Amanda Reed, who uses outdated or rare alcohols to compose a beautiful mixology. We recommend happy hour (from 3pm to 6pm) with a handful of dishes and a list of wines and cocktails at low prices. Or the sacrosanct brunch on weekends, but it is very popular.
