Mathilde, a Frenchwoman based in Patan, combines French savoir-faire and Nepalese gastronomy in a menu of gourmet dishes to share. Her à la carte Nepalese recipes from different regions of the country (Tharu, Thakali, Newa, etc.) have been drawn from family kitchens, sherpa kitchens and the kitchens of rural dwellers.
