Since 1991, the city of Puebla has celebrated the mole poblano, the traditional Mexican dish in sauce, every year.
For mole lovers, but especially for those who don't know it yet, this is the date to remember! More than 2,000 participants come together every year to enjoy one of Mexico's most emblematic dishes. The mole (Spanish word from the Náhuatl mulli, "sauce") is a typical Oaxacan dish made of roasted chilies, cocoa, tomatoes, nuts and chocolate that is pounded in the molcajete, the traditional Mesoamerican mortar.
