This former convent, which opened in 1683, is known as the kitchen where the mole poblano was invented by the nun Sor Andrea de la Asunción, during a visit by the Viceroy of New Spain. She is said to have been inspired by a voice telling her to mix the ingredients that give birth to this emblematic sauce. The kitchen is a magical place, entirely covered with local earthenware, the talavera. The building is now dedicated to the native cultures of the state.
