He succeeded perfectly where his predecessor drew a solid reputation, in this prestige restaurant, in Victorian style, with pastel tones dominated by pink. Separated from the room by a simple window, the kitchen leaves the brigade affairer with its chef developing refined dishes: langoustines de langoustines, salmon tempura and wakamé salad, Saint-Jacques crispy walnut sauce curry, Charolais beef fillet Au pepper. For the greedy: crystallized pear with sweet spices, blown at the Grand Marnier. The wine cellar houses a fine selection of French and Californian wines.
