After training as a cheese-maker with a leading Parisian company, Aurélie (who holds a degree in agri-food and health) set up shop here, in the Halles Municipales, where she offers small tasting plates. The young woman carefully selects producers, notably in the Basque Country and Béarn, for guaranteed GMO- and silage-free production. Passionate about her work, she is happy to explain the refining process, and also prepares buffet platters ideal for receptions or aperitifs with friends.
