FOURSQUARE RUM DISTILLERY & HERITAGE PARK

After Mount Gay, it's the country's other major distillery, home to popular brands such as Old Brigand (known to Bajans as One Eye Man), Doorly's, their own Foursquare brand, Sixty Six and others. These rums are distilled under the guidance of Richard Seale, the master distiller & blender, representing the^4th generation of Seales to work in rum. Built on the site of an old plantation, the complex is a blend of modern facilities and historic buildings. Much more than a distillery, it's a veritable heritage park. Admission is free, and the tour is self-guided, following markings on the floor that guide you through the various stages of rum-making. What sets Foursquare apart is the balance between tradition and innovation. The rums are still distilled in copper stills, and the distillery is at the cutting edge when it comes to the environment: sugarcane waste is used in agriculture, and the carbon dioxide produced by the distillery is captured and recycled.

The complex is vast, decorated with metal sculptures made from machine parts from the old sugar mill, and you can admire some fine examples of local architecture. Among them, the Distill House, restored and transformed into a bar, the Copper Still, where you can indulge in a tasting session. Dario Folkes, who runs the bar and guided tours, will reveal all the secrets of the beverage.
