And if, "at the beginning, we only delivered carp in the "r" months, today the Bihl establishments are recognized and called upon throughout the Eastern region, including Germany and Switzerland. Know-how leads to impeccable quality, to which we must add punctuality. As a result, some of the biggest names in Alsatian catering are supplied here with carp stocked in spring-water tanks until they are 3 years old. Only then is the carp, weighing close to 2 kg, delivered to a restaurant owner's fish tank, or in ready-to-use fillets brought in by refrigerated truck.
