Foodies beware: Dimitris Katrivesis, another big name in Greek gastronomy, took over the Mavro restaurant at the Kivotos hotel in 2023. With a passion for fusion cuisine, he offers a rich menu blending the cuisines of Santorini with the flavours of Asia and Latin America. Santorini eggplant, for example, is cooked with cinnamon oil, wrapped in seaweed and served with miso sauce. The tasting menu is well worth the trip. But on a terrace overlooking the Caldera, you're not just looking at your plate. Reservations recommended.
