An ecologist at heart, Joanna raises chickens for fresh eggs and manages waste. She has also created a large kitchen garden where she grows a variety of vegetables on a sustainable basis. Here, particular attention is paid to raw materials, and this is perfectly reflected in the dishes, which, far from distorting them, enhance their original flavors.
