Artisanal cheeses and yogurts are rare enough in Puerto Rico to be notified. Quesos Vaca Negra was founded in 2008 by Wanda Otero, a certified microbiologist. At the time, she was advising dairy farms on how to comply with health controls; since they could not afford the related expenses, Wanda proposed to barter their laboratory debts in exchange for fresh milk. What to do with the bartered milk? This is how the idea of producing raw milk ripened cheeses was born. Visit and tasting on site.
