DOMAINE PAUL PILLOT
Domaine Paul Pillot is a winery located in Chassagne-Montrachet, Burgundy. Founded in 1968 by Paul Pillot, it is now run by his children, Thierry and Chrystelle. The domaine owns around 13 hectares of vines in Chassagne, St Aubin and Santenay, two-thirds of which are planted with white grape varieties. The soils of the Chassagne-Montrachet vineyards are predominantly limestone and clay. The domaine produces a fine range of wines, including Chassagne-Montrachet Villages and Premier Crus, as well as Santenays and Saint-Aubins. Domaine Paul Pillot wines are renowned for their purity, intensity and elegance, faithfully reflecting the characteristics of each terroir. The domaine practices organic farming, but does not have a label. It is possible to buy the wines on site, but there are no organized tours. The estate produces around 80,000 bottles a year.
