The Route du Crémant, created in 2012 by the Syndicat de défense des intérêts viticoles des Coteaux du Châtillonnais, is in the midst of a major transformation, a facelift motivated by the arrival of young winemakers. The new route will take you through the most beautiful valleys and hillsides to discover the Châtillonnais vineyards, its villages, its grape varieties and its unique history. Note that the Crémant route crosses the Parc National de Forêts. Crémant is a wine that develops bubbles in a process identical to that of Champagne, and when you consider that the Châtillonnais is a terroir of bubbly grape varieties and so close to the vineyards of the Aube, it's easy to see why Crémant is such a success. The itinerary takes you from Molesme to Gommeville, passing some of the most beautiful viewpoints and open-door estates. You'll see how farmers have gradually converted to or diversified into winegrowing. Most of them now handle their own Crémants, following major investments in wineries and other cellars. Still wine production is also booming. It's worth noting that 400 ha of vines are currently planted in the Châtillonnais region, out of a potential 1,500 ha, so there's plenty of room for growth in terms of Crémant production. In March, don't miss the Fête du Crémant et du Tape-Chaudrons, in Châtillon-sur-Seine, where almost 5,000 visitors flock every year.
