Within the Mondrian hotel, the setting is fabulous, decorated by the Japanese artist Hiroshi Senju. Especially the sushi bar where you can watch the chef Marimoto working in the open kitchen. A real show of culinary goldsmithing, like the ishi yaki buri bop, fish cooked with rice on hot stones with subtle flavors, a Kobe beef with the chef's sauce, or an assortment of the most playful sushi (pipette sauces). The floating island revisited as a dessert with raspberries is exceptional. A very contemporary table.
