Yes, there is one area in Mâlain: the domain of François Bouillot and Claire Solomon who took over the operation of Yvon Michéa. They come from the Rhône where they also have vineyards, in Ampuis. In their approach, they perpetuate the work initiated by Yvon Michéa, namely the work of vines and cassis plants in organic farming. Better still, since the vintage 2014 wines have not received sulphites, so they can be described as natural. The 1.5 ha of cassis plants are in organic conversion and give birth to a nectar of cassis, almost a cream (but without alcohol), with the taste of fruit very pronounced and sweet just right! About cassis cream, it also exists! Developed by a liquoristic partner, it is perfect. For wines, the 2.7 ha of vineyards (mostly planted in lyre) produce Aligoté, Pinot Noir and Chardonnay in AOC Bourgogne, all organic and natural, and 100% vinified to Mâlain. Pinot gris and gamay varieties giving them the name Coteaux Bourguignons, without sulphites or almost sulphites. Organic wine lovers will be happy to find their happiness outside the beaten trails in a pretty village near the canal and the Ouche Valley.
