LE CHAMPENOIS
Over the years, the house has retained its charm and old listed staircase. The menu is truly daring, using rare ingredients, game, old-fashioned vegetables... A good example is the filet de biche with blackcurrant and espresso sauce, accompanied by seasonal vegetables, which surfs between the freshness of the fruit and the strength of the meat. Monkfish and prawns, roasted pineapple sauce and vanilla flambé with cardamom risotto are equally astonishing. To conclude: poached pear with chicory and caramel, hop flower ice cream and hazelnut crumble. A true voyage.
