The Domaine Polette created in 2012 is not a young domain. Its vineyards come from the vineyard created by the Cistercian monks of the Abbey of Cîteaux. Pascal Polette, who has over 25 years of experience in wine and wine making acquired in Côte de Nuits or Côte de Beaune, has just taken over the last vineyards of the Val de Saône to produce organic and natural wines. More than 3 ha of vineyards planted in Biodynamie between Broin, the Château d'Auvilars sur Saône and Haris Echezeau. The last winemaker in the Val de Saône, Pascal Polette is in charge of preparing natural wines without sulphites. A white and a red, two PGI at special assemblies. Le Blanc is produced from 1/3 of Melon, 1/3 Chardonnay and 1/3 from Aligoté. The Red has 20% of Gamay alongside Pinot Noir. Culture as vinification is very natural, manual harvest, no dégrappage, manual pressing, no drawing or filtration and very few sulfite. The wines are to drink within 5 years, they are typical, the white a little disturbed because it brings new flavors.
