Lucien, an ambassador for gastronomic products from Aosta and Emilia-Romagna, prepares arguably the best contemporary Neapolitan pizzas. At Calabria, it's all about the quality of the impasto, which Lucien works with high levels of hydration. The light, airy dough with its thick edges is succulent, leaving nothing to be desired. Préparée avec grand soin et savoir faire, la pâte est délicieuse: aérée et tendre. La sauce tomate donne beaucoup de saveurs aux autres ingrédients.
