PAUL CHOLLET - CRÉMANT DE BOURGOGNE
Gilles Remy assisted by his niece Manon Remy has perpetuated this estate specialized in the production of Crémants de Bourgogne. A tradition born in 1955 in Savigny with Mr. Paul Chollet. This name has become a reference in the Burgundian sparkling wine world with a range of 9 vintages, all with fine bubbles but with typical assemblages. More than 200 000 bottles are produced each year from manually harvested grapes out of a total of 25 ha of vineyards of which 4 ha are under proprietorship. New vineyards will soon push this off-trade production to 8 ha. Only Pinot Noir, Chardonnay and Aligotés from Hautes-Côte de Beaune and Hautes-Côte de Nuits. The tasting cellar in the heart of Savigny offers a discovery and understanding of how the Crémants are prepared, the new winery located outside the village helps to optimize the production quality. Among the vintages, there is one Grand Eminent, two Eminents, an Œil de Perdrix and even an astonishing and rare Mousseux Rouge.
