L'HOUSTALET
French cuisine and Vanuatu products have been in the spotlight for 40 years. Clément, the founder of this establishment known as far away as Nouméa, offers, in a room with a minimal decor, but enhanced by paintings in evoked shapes and flamboyant colours by Aloï Pilioko, a mixture of French dishes such as the sublime piece of Vanuatu beef and its gratin dauphinois, and more local dishes made with seafood; shrimp tails gratin, popinées (sea cicadas) grilled, roussette stew (bats), nautou (large pigeons) with mushrooms... The staff, who are French-speaking, are taking care of themselves.
