AU FARÉ
Under a large traditional faré with a green roof and huge wooden poles with a smooth yellow concrete floor, on the waterfront, Au Faré restaurant offers a breathtaking view of the bay of Port-Vila by day. It is an ideal place for a breakfast, a lunch under a cool haven or a nice dinner. Coconut crab is a delicacy, such as fish carpaccio (with its basil oil, sesame seeds, green onions, tomatoes, capers and parmesan petals) or crispy aiguillettes. Romuald Ledoux, the boss, is very present and very friendly as is his mostly French-speaking staff. Drink a fresh lemon juice, a real delight. On Friday, local groups come to host the evening, and on Saturday, the bar-restaurant offers a fire dance show, one of Vanuatu's specialities. Au Faré is the headquarters of the Betsy Ross Foundation, which aims to safeguard this very classic ship, a rare veteran of the Second World War.
