Angobin gas is a sweet secretion produced by shrubs of the genus Astragalus. It is mainly harvested in Kānsār, in the province of Ispahan. It looks like honey and the Iranians have used it for centuries. The nougat produced with egg and egg white, filled with pistachio or almonds shards, is a specialty of Ispahan that participates in the soft local life.
