The Toque nivernaise Jean-Michel Couron officiates near the church of Saint-Etienne. His gastronomic cuisine has proven its excellence. On the day of our visit, we enjoyed a starter of celery velouté with Burgundy snails, farmhouse goat's cheese and walnuts. This was followed by a supreme of free-range chicken à la plancha, gnocchi, parmesan and tonka bean-infused chicken jus. Before finishing with an apple and mascarpone jelly with rum, Breton shortbread crumbs and salted butter caramel. Magnificent!
