Fans of Lyon's bouchons will love its Nivernais counterpart. At the head of the Bouchon Nivernais, Fabien Guichard offers you traditional dishes, beautifully revisited with taste and finesse, worked with raw, often local produce. During our visit, we particularly liked the gingerbread-breaded Saint-Marcellin with cider sorbet and grilled bacon as a starter. This was followed by a casserole of veal kidneys flambéed in cognac, before finishing with a sangria-style poached pear. Creative and, above all, excellent.
