Fans of Lyon's bouchons will love its Nivernais counterpart. Fabien Guichard heads up the Bouchon Nivernais, where he serves up traditional dishes, beautifully revisited with taste and finesse, using raw ingredients and often local produce. We particularly liked the poached egg with donkey's balls and a winegrower's sauce with lardons, onions and mushrooms. This was followed by a casserole of veal kidneys flambéed in cognac, before finishing with a caramelized French toast-style brioche. Excellent.
