Inland, a small sheep farm is reviving the tradition of sheep breeding, once important on the island. Sara Esposito, as an initiator of the return to the roots, has built pens made of wood and recycled material to accommodate her Comisana sheep, a breed of Sicilian origin considered among the best. Today there are only two sheep breeders on the island, one of which is Sara, who, from milking by hand to maturing, makes her cheeses: caccio and ricotta (fresh or matured).
