Gustavo, his wife Teresa and their dog Cognac welcome visitors to the mal of greenery in their 200-hectare estancia where, as his name suggests, he is good fishing between fields where grazing cows. Originally French, he built the estancia of his hands and now offers comfortable rooms and a table of quality land. A traditional lechona à is never far away, as is a Tannat wine to water it, after a day of horse riding, cycling or bird watching.
