Xavier, the French chef, is famous in his field; it has worked for over 20 years on the island. It offers a new cuisine combining Caribbean flavors and aromas . On the menu, today's special such as shrimp salads, Greek salad, fish broth or simply grilled. In the evening, the atmosphere is more cosy and more refined menu: callaloo soup (a kind of tropical spinach), shrimp cocktail and crayfish according to the season.
