Here's a simple tex-mex just the way we like it. The food is greasy and the portions huge, but it's so good! Our preference is for cheese enchiladas, with chicken and cream. In New Mexico, you'll often be asked: red, green or both? That means what type of chili you want, bearing in mind that green is hotter. Why not both? Expect a dish covered in cheese and the chili of your choice. It's almost like soup on a flat plate. We also recommend enchiladas rellenas.
